I travelled to the Caribbean in February on Fred Olsen Balmoral and had a thoroughly enjoyable time. Drink prices: Glass wine £3/£3.50, single spirit measure £2/£3, bottle of Stella £2.35, glass of Kir Royale £3.80, J20 £1.60, bottle of wine from £10.50. No gratuity is added to drink prices. Any alcohol bought on shore will be confiscated at each port when you go through security. It will be returned to you on the last night before disembarkation. Excursions range in price from approximately £28 to £99 (swimming with dolphins), reasonably good value, well informed guides. Plenty of taxis available at each island for independent touring. Fred Olsen recommend tipping £2.00 per person per day for your room steward and table waiter; tips are not automatically added to your account. Service was excellent, staff fully deserve anything you choose to give them. Happy cruising!

I agree with most of this info however FOCL do add 15% to all drinks so there is no need to tip the wine waiters or the bar staf.
