We were on Freedom in March.
The main dining room is where you have a reserved table and where formal and informal dining nights are held. Breakfast and lunch are also served there. You don't have to dine there if you don't want to.
The Windjammer dining room is self service with a large choice and more casual.
We had breakfast and snacks there but you can eat there all the time if you want to.
The Portofino restaurant is Italian and you have to book early. There is a 10 dollar surcharge per person.
Johnny Rockets is a fast food themed diner with a small surcharge.
There are also cafe type places on the Promanade where you can eat and drink 24 hours (included in the price).
There is one main diningroom where the evening meal is servred in two sittings it is also used at lunchtime and can also be there for breakfast. You will be advised of the times the main restuarent is available on arrival on the ship. There are various other areas where you can get breakfast; morning coffee; lunch; afternoon tea and a meal in the evening if you don't want on any evening to take your meal in the main diningroom. There is always a speciality diningroom you must make a reservation for this and there will be an extra charge often in the region of $20 or £12. When you booked you should have been asked what your preference was for the main diningroom 1st or 2nd sitting. Normally first 6.30 p.m. and then 2nd 8.30p.m. You could always ask a supplementary question tagged onto this response if you require further help.
